So it was 5:30 and I hadn't even begun to think of what to make for dinner.  Do you all ever have nights like that, or am I in this one alone?  I racked my brains but could only come up with  -----  pancakes!!  That's right, pancakes.  In an attempt to excite my children beyond their recognition of their mother's obvious lack of planning, I made the big pronouncement, "we are having breakfast for dinner tonight - yeah!!"  To my surprise and ultimate relief, they were excited.  My 5-year old immediately picked up on the theme and said, "it's opposite day, Mommy.  I hate you and your ugly!""  Okay, I can live with that - since it's opposite day - and I just snuck a fast one by my kids.  But they didn't even know the half of it - because I was going to make the pancakes with a new pancake mix - and it had loads of fiber in it. 

I snuck into the kitchen so as not to arose their interest and started preparing the dinner.  I used the new Fiber One Complete Pancake Mix.  The pancakes were light and fluffy and delivered 5 grams of fiber per serving vs. regular pancakes at just 1 gram!!  I then added some turkey bacon and cut out an incredible amount of fat, added some fruit on the side, and they had a very nutritious dinner that was quick and easy and actually good for them.  Okay, you ask, but did they eat it?   YES - they LOVED it!!  Yippee.  It doesn't get any better than that.  They ate well - while they ate well!!  Score one for Moms everywhere!
